I don't think there is a "skip inbox" function on the Macintosh rules, but
I haven't played with them lately. The Macintosh mail rules have a copy and
move function. So the move function would be like the Google's skip inbox.

If you create a folder under your Gmail account on Macintosh Mail, and you
are using the IMAP protocol to retrieve e-mails then this will create a
label on the web page.
