suggestion, going by what you said you've noticed you have something to change
during your spell checking\send so vo+shift+m scroll down to spelling and
grammar sub menu and in there should be hide spelling and gr

I have "check spelling before sending" selected in the edit menu. In Outlook
if I realized that I didn't address my note properly or could have phrased
something differently I could abort sending during the spellcheck process. I
have nmot found a way to accomplish this in AppleMail
