So I have a folder of jpeg images. When I try opening them, they only open
in preview. I thought they would open in photos or at least in iPhotos? I
would like to be able to resize or adjust them accordingly and of course,
preview does allow that.

You can export them as word. Under the file menu in pages, arrow down to
export sub menu and choose word.
