What I did is probably a bit unconventional...I found an online OCR service,
paid for credits for OCR, created a script to use their API, and just feed
images or PDFs or whatever through that script to get the OCR output. Works
really well for me :D

Accounts pane of Mail Prefs, select your Gmail account, then select the MailBox
Behaviours tab. What is your Trash Mailbox set to and what is your Archive
Mailbox set to?
