I once struggled with this problem for a month or so before I noticed
that when texconfig put me into vi for editing the language files, I
never SAVED the file before exiting vi, just used :q. Then I found out
about :w and everything functioned :)

All is good now! I'm not sure what I have done.
Just play a little bit with texconfig, don't run texhash after, Reconfigure in Lyx,
Close it, open, and I have hyphenation in spanish... now i'm gonna try catalan.
Tomorrow I will ask about the harvard styles ;-)

I executed texconfig -> hyphen -> latex (and appeared the same file I edited before:
/etc/texmf/language.dat)
I tried to edit /usr/share/texmf/tex/platex
