sending a CC#7 command (channel volume) on each channel with a value of 100.

After beating my head against the wall on a problem like that for days
i would change the dynamics in the LilyPond file and run a special
rehearsal version, until you figure out the more clever method you
propose.

As far as I remember- when you typeset a dynamic sign like \mf this will be
mirrored in the midifile. So maybe it's the easiest way to specify the dynamics
in the .ly-file..

That is correct. However, I want to remove the CC#7 commands all together,
not modify them.
