Using \rest does disable automatic shifting, doesn't it?
E.g. you only have to write b8\rest instead of r8

The \voiceOne, \voiceTwo, ... commands (which implicitly are applied
to the voices if you use the <<{...} \\ {...} >> construct) set the
staff-position property of MultiMeasureRest differently for the two
voices. So, if you want them to coincide, just do
\property Voice.MultiMeasureRest \revert #*s

To unset an object property, just use the syntax:
\property context.objectname \revert symbol
