Agreed. Best to just use GrandStaff.
If you do stick with PianoStaff, 11.3.3 "Controlling spacing of
individual systems" gives an alternative approach to reducing vertical
space between piano staves, using NonMusicalPaperColumn.
Note that 11.3.3 will soon be changing.
