delay me, and I took a long time for me to do some experiments.
By downgrading the Frescobaldi package to an earlier version, I can
sometimes temporarily get the ~50%

Now it works.
I had tried: #(set-default-paper-size "a4" ’landscape) - Frescobaldi showed
staffs running vertically. ;-)

Unfortunately my skills are not enough to install Frescobaldi on a Mac but I
observed exactly the same behavior using Lilypond via jEdit. IMHO this points
towards some cause within the software that Frescobaldi AND JEdit are dependent
on. Though I don't have any idea which one.
