There is a (brief) new section in the Learning Manual at 4.6.2 which introduces
you to using variables for tweaking. See

You can! I often use:
bakg = \override Beam #'auto-knee-gap = #6
rh = \change Staff = "rh"
lh = \change Staff = "lh"
etc. Fot stem direction LilyPond already
