Small notes:
- skip is introduced in NR 1.2 Rhythms
- \context, \new, Staff, Voice, etc. are described
I am not sure if I got your question correct but I think chapter 7.1.2 "Manual
staff switches" is what you're looking for.
If you want to have a kneed beam you have to specify the stem-direction for
each note.
