Is that still the situation? If the time signatures and dynamics are
now fixed, I'd be very happy to relegate the hacky approach to the
status of a historical horror and document a far simpler method that
works with modern Lilypond.

The only problem was that I couldn't find any easier way to change
the font throughout than by using an alternative $LILYPOND_DATADIR.
I don't think I managed to get ly:system-font-load to even load a
font at all from outside the data directory, and even if I had,
modified Lilypond binary, and all I had to change
was the fonts subdirectory of $LILYPOND_DATADIR.
