@tjaalton, looks like 6.8 is discovered last by /etc/grub.d/10_linux,
thus ending up at the bottom of the grub menu, under the "advanced"
menu. The first boot option is still using 6.5.0-1027-oem, (i.e. the one
selected with the default /etc/default/grub that uses GRUB_DEFAULT=0).

I tested ffmpeg for encoding hevc_vaapi and h264_vaapi, but not reproduced the
issue on ThinkPad X1 with Intel(R) Core(TM) Ultra 7 165U.
My environment:
Ubuntu 24.04 LTS
ffmpeg version 6.1.1-3ubuntu5
6.8.0-40-generic
$ ffmpeg -hwaccel vaapi -hwaccel_device /dev/dri/renderD128
-hwacc
It seems to be fixed in linux-oem-6.8.0-1011.11 as well.

Your ffmpeg example is on the simple side compared to the pipeline that
creates the issue for me, where ffmpeg has multiple inputs and a
pipeline that touches both the GPU and the CPU. For simple things it
works okay here
I hit the issue, in Wayland only.
Adding of "options nvidia NVreg_PreserveVideoMemoryAllocations=1" into
/etc/modprobe.d/nvidia-graphics-drivers-kms.conf and running "sudo
update-initramfs -u" (not sure it's needed) + reboot helped me. Now when
I resume my PC from the suspend mode, then a desktop

I have gone over all of the logs and files you have provided, and
unfortunately nothing is standing out as the cause of the reboots.
If there was a kernel log of what happened at the reboot time, there is
very little to investigate this.
