Found the issue: the fps is only limited if I set adaptive sync to "Always". Is
this expected?
I'm using this option because "Automatic" and "Never" at 165hz causes

Just tried with a live usb of manjaro-gnome and it worked fine. If there is a
better way to use plasma 6 I can try it and see if the problem persists.

Correction: chromium runs with 165 fps using XWayland, not 120 fps
