I think I've finally found the cause and a workaround.
I've submitted a PR to flathub to implement the workaround. Once it's merged,

It's correct that only the password is stored in the keychain along with the
app name, and not the username. That's intended behaviour (and I think also a
limitation of the secret service protocol).

I found the entry for Kasts in the keyring earlier and deleted it. After
deleting the Kasts folder in var and reopening Kasts, I entered my credentials
again. The entry got created again in the keyring. W

I am using the gnome-keyring and also keepass2 as my normal password storage,
which shouldnt be involved in this (hopefully).
By "using gnome-keyring" I mean, its installed and it manages my ssh-keys etc.

Yes, that's correct: "my_nextcloud_username" is used to store the password in
