yup, weird that apt package is that old ! did not pay attention first. Now it
seems more stable with 24.12.03 (i face new bug though on export now,
"weasyprint missing" message on error even with a pandoc

I moved from the apt install to the snap (version 25.03.70) and it seems to
start fine with this version. So maybe that's it.
