I have not deleted SaveToPostGISDataSource.java
but I could not tell eclipse to use it.
Must I configure something in eclipse
that the Save Dataset As... shows me the PostGIS-Option?

You can see the dialog by doing Save dataset as... Format: PostGIS Table. Label
means "Layer" from OpenJUMP project.

I committed my update to the german language file.
I hope it works as I got an error. But a svn-notify email seems to
confirm the commit.
