After the 1989 earthquake in the Bay Area, the 300 set saved my day. The
local switch (PLACAL02) would not budge on tone dialling, but pulse worked
just fine (using a non-mainstream LD carrier of course).

I also have seen "ietf58" as an ad-hoc network (or "Computer to Computer
Network" as Apple calls it) in several locations today, including here
in Salon C.
I have to wonder if this is just cluelessness or malicious behaviour,
someone trying to "steal" packets.

I don't think so. *If* there is a "dataport" it should be vanilla RJ-11,
but I would strongly recommend getting a native phoneplug/adapter in any
case.
