You can run "guix search irc client" to find a few, try them out with guix
shell, and figure which one works best for you ;)

I can warmly recommend Circe in Emacs. Before that, I used WeeChat and
Irssi but they are harder to configure, especially the latter.

I also have a bouncer (znc) on my server which stays connected for me.
