The simple work-around is to copy /usr/lib/libz.1.dylib to
/Applications/Gnucash.app/Contents/Resources/lib/, most easily done from
Terminal:
cp /usr/lib/libz.1.dylib /Applications/Gnucash.app/Contents/Resources/lib/
