I exported to a CSV. It look like the "Import Transactions from CSV"
will allow me to pick which column is "Notes" vs "Description".
Are there any other gotchas with the process that I should know about?
Is there any documentation on this feature?

Before you go down that path see if any others on this maillist have had
the same problem with release 3.3. I am still on 2.6.15 or 17, so I have
not seen the revised importers.

What do you mean by online banking.? Are you actually using the OFX import?
If so, just do not use the option to update the transaction when matching.
Then Gnucash leaves the description unchanged.
