I tested with a fresh MATE install and it worked fine as expected.
No gray box.
Do you happen to have a custom CSS file in use?
Are you using the default Mint theme or a custom theme?
No one else so far has reproduced this problem you describe.

I'm running Linux Mint 21 with GnuCash 4.11 (built from tarball) installed and
have no editing problems at all with it. Many of the interface teatures are
determined by common libraries on which GnuCash depends particularly changes in
the GTK libraries rather than in the gnuCash coding its

I happen to have a Mint21 VM using VirtualBox I've been trying out so I
installed GnuCash to test and see if I get the same issue.
I don't. Everything works as expected. There is no gray box and I can
highlight amounts from the left or right with no problems.

I am running GnuCash v4.8 on Windows 10. There are no problems
selecting (from the left or the right) and editing amounts or any other
fields. I suspect your issues are due to the underlying GUI libraries
that came with Mint and not GnuCash itself.
In the reconciliation window,
I don't see your grey box issue. I can click on any field, deposit,
withdrawal, shares, etc and edit the number. GC 4.8, xubuntu 20.04
