You've got your answer about the data file, but preferences and any
Saved Report Configurations (special animals) are a different matter.
Those should be addressed by the Wiki if you look in the FAQ for

The one issue that hasn’t been brought up today is that you can’t double click
on the data file and have it launch gnucash on a mac.
So, Launch gnucash. Click on the file menu. Choose “Open…” and use the file
dialog to navigate to and select your data file.

To see iCloud files on a Mac:
Click on the iCloud drive in the Sidebar of a Finder window.
If it is not there, do the following:
Go to the Finder
Open Finder settings
Click on the Sidebar tab
Check the box for iCloud Drive
Close the settings window
Click on the iCloud Drive that now appears in the
Open finder. There will be a list of folders on the left. On mine one of them
is "iCloud Drive". Click on that and hopefully it will be there.
