I talked to the only group of gtk developers I could find, on #gimp on
irc.gimp.org (#gtk is empty _everywhere_).
They were surprised that the menu stuff doesn't have a callback on the
yanking of a hotkey, and that you could just yank one away w/o getting
some sort of notice.
They agree that

It seems to me that the mode menu (single line, double, etc.)
and the sort order menu would be better off in the top menu bar
rather than in the toolbar. Also, maybe the register toolbar
should be at the top, under the menu like in other windows.
