To me this looks like a simple case of not being in X when trying to run
an X-based application.
Trying starting X (most likely you run gnome) then try to run gthumb.

The module (saa7134) is loaded and has the correct board type and tuner
but no matter what application I use (I have tried xawtv, kdetv and
tvtime) I cannot get any picture or sound.

I am having as issue with 2 x NTFS drives that are in my Gentoo box that I
am trying to share by AFP. EXT2/EXT3 shared drives work fine but not NTFS,
it just returns and error when trying to mount on the Mac that the volume
could not be mounted.
