For 2 subjects that is what you can do.
If you have a lot more, I would suggest to have a look at GNU Parallel [1].
It's also available in the Ubuntu package system.

sure, as long as you have more than one core. You can run them in the same
terminal as long as you put & at the end of the line

terminal, and in each of them, I first runing:
$> export FREESURFER_HOME=/usr/local/freesurfer
$> export FREESURFER_HOME=/SetUpFreeSurfer.s
