If you want a numeric result indicating the number of hours, use
=A1*24
(where A1 contains the "time")
And format as General or as a number / number with decimal places.
That will give you 5 instead of 5:00:00 AM, and it will, for example, give
you 5.75 instead of 5:45:00 AM.
