I realise I altered the authentication method from Oauth2 to Password
(only way I could find to input a password when in the Oauth2 loop).
Embarrassingly, I forgot to alter it back again. All is now well.

Change to the Defaults tab
Change the settings Drafts Folder and Send Messages Folder

which signature to append to the email you are composing.
You can create signatures to appear in the list from the preferences
dialog, Composer Preferences, and then the signatu
you Inbox folder, switch to the Message Popups tab and enable
popups. There are a number of different options you can experiment
with.
Once you've finished configuring you should be able to repeat you
experiment with minimising Evolution and sending an email from GMail.

The main problem you will discover is that CALDAV support is still quite
new, I believe that it is only available in the latest Evolution
releases and I am not sure how advanced the support is on the server
side.
