[Evolution] Change subject line

I am using Evolution 2.10.1 on Ubuntu to access a Dovecot powered IMAP server. I would love to be able to edit the subject of received emails to make them easier to identify later. I have tried looking through the archives but because every archive message has the word "subject" in it I haven't b
