I have setup my Dovecot director proxies and Dovecot backend mail
stores. I intend setting up several incoming and outgoing Exim
MTA's. I am a bit confused about what I need to run on the backend
Dovecot MTA's to get the incoming mail delivered to them. Do I need
to install Exim on them
since you are obviously using the binary shipped with
Mac OSX and packaged by Apple Inc. which is heavily
outdated while current dovecot is version 2.2.12

A use-case with authenticated SMTP is to have the server restrict
From/Sender headers based on the authenticated user. (and adding the
actual authenticated user to the headers)
