I think you will have to have a copy of visio in order to see the visio
diagram that is included in a MS Word document.

If you start DIA you will get several distinct windows. One of them has the
name 'Dia' and the version you are using.
In that window you see at the bottom your arrow. There you can define what
kind of arrow you would like to have - or just a straight line - if that is
what you wish.

I click the "Flip horizontal" and then "Flip vertical" on the "Process" object
but it does not flip.
How to make it flip?

If Brian is correct, then you may wish to try taking a screen image of the
visio diagram, this can be placed in Dia and you can edit over top of it.
MS Word also has image annotation capability in the picture editor.
