Since AOO for macOS is built for Intel and the M1 is an ARM chip it is
automatical

If there are no objection until then, I will upgrade our M1 machine to
macOS Monterey next week.
We still have the other machine with macOS Catalina.

My opinion is yes.
In any case people with an M1 Apple are probably 0,0001% of AOO users, if any
of them would use an old school Office suite...
