Ideally we would like to know if this bug still happens in GNOME 3.38
(Ubuntu 20.10 or 21.04). If it does then it should be reported upstream.

echo $LANGUAGE displays fr_FR:en
"gsettings set org.gnome.desktop.calendar show-weekdate true" seems to
just add the number of the weeks in the calendar, it doesn't add the day
of the week. Thanks.
