I'm not having this issue anymore, and I didn't really pay attention to
the issue in the meanwhile, but I think it disappeared when I switched
from Ubuntu 20.10 to Pop OS 20.10.I don't know if that's useful at all,
but looks like the issue is vanilla Ubuntu only.

Gnome or Gnome Disks, so I can't tell you whether this is expected

just fired up Linux Mint 20.1 on a USB flash drive and whatever version
of gnome-disk-utility it has, it shows "Audio CD" instead of "unknown."

this week with some fixes that might help. Please update your system:
sudo apt update
sudo apt full-upgrade
and then reboot.
If the freeze still happens after that then when it does, please reboot
and run:
journalctl -b-
Please also check you have the latest version installed:
dpkg -s gnome-shell-extension-desktop-icons | grep Version
It should say:
Version: 20.04.0+git20200908-5~ubuntu20.10.0

We can often tell exactly what caused a freeze after rebooting and
looking at the log of the previous boot where the freeze occurred.
Next time the freeze happens, please reboot and then in a Terminal
