I have the same for NEF files, property window opens and then main
nautilus window greys over. Nothing is clickable but can be 'force
closed'

Clicking on properties of every nikon d7000's .nef freeze my nautilus (I
haven't try with raw of other digital camera yet).

Same problem with Nikon. NEF. Not all .NEF, just some file/directory.
Parent can be closed and NAutilus seems restart normally.

I ran
strace nautilus
to see if there is more info, and the program worked flawlessy and
allowed me to set the 'open with correctly' - no idea why this worked.
