I would fix it (if I hadn't switched to Kubuntu already) by making an editor
application to edit the user's mime settings in ~/.local

That is a a minor patchover and does not solve what I am trying to do.
I know how to edit the mime DB myself. My issue here is that changing the "Open
With" option simply overrides the default application handler. It doesn't
change the underlying mime type. For example: you could right click on H

Thanks for your report. What are you trying to do?
If you want to determine which opens which file type, try right-clicking
on the file, choose 'Properties' and then 'Open With' (fourth tab). Does
that help?
