Be that as it may, the description for "Evolution Data Server" says
"The data server, called "Evolution Data Server" is responsible for
managing calendar and addressbook information."
Why would such a package remove something like "gnome-desktop" ?
BTW "address book" is two words.

I am afraid there is a misunderstanding here -- you are considering
anything that starts with 'evolution' as part of the mail client. This
is not correct. If you do not need, or want, the Evolution *Mail*
client, you should select, on
** Attachment added: "Screen Shot of Synaptic"
