Thanks for replay =).
I know about it, but I use:
LANGUAGE="en_US:en"
LANG="en_US.UTF-8"
... and want that Monday will be 1st Day of Week.
So, in Evolution it's not a problem to change.
Could it be in Clock Application !?

gnome-panel detects the first day of the week based on the locale
setting so there's no need for an option there.
