I just noticed that, inside the login screen, making text larger (using
the top-right accessibility menu option) and toggling it back to its
normal size, makes the ellipsis disappear. Only for that session, of
course.

The issue is due to the gnome-settings-daemon update, the component got
reverted now and blocked in proposed since it shouldn't be updated
without the gnome shell new version. You either need to wait for the
other component or manually revert to the previous binaries
