As asked by fabbione, I tried to debug the segfault by using
xserver-xfree86-dbg. However, with xserver-xfree86-dbg, X didn't
segfault, but crashes like it did without the VideoRAM option (I check
that I hadn't removed it from my config).
Here is the log of the crash with xserver-xfree86-dbg,
