I finally found a way to bypass the grub installation that was hanging.
Just did
pkill grub*
Then I added
GRUB_DISABLE_OS_PROBER=true
to /etc/default/grub
and typed
update-grub
The upgrade is now smooth and fast.
However, it still takes about 5 minutes to reboot with the same messages
