mutt(1) seems to agree with this use of the EMAIL variable, and others
might, I haven't checked.

You don't find out that the From address is borked until somebody at
debian.org googles for the person who reported the bug because a reply
bounced. I guess that explains why it seems like nobody at debian
ever answers my bug reports any more.
