I have studied the code, and it seems the option was removed in this commit:

There some leftover in chroot_hooks through

All the variables you set before executing command lb build so for example
(root):# export LB_CHROOT_HOOKS="some value"
(root):# lb build
or
(root):# LB_CHROOT_HOOKS="some value" lb build
Please can somebody correct me if I am wrong.
