a 'ubuntu like' dvd you can do with debian, and as far as i could see
when i last looked at an ubuntu dvd image, they do not have multiple

Sometimes you need skype on LiveCD, but sometimes it is not necessary.

i personally don't think so.
first of all, if packages lists are not working (because
testing/unstable changes), then they need to be fixed. an exclude
mechanism doesn't save anything there, imho.
