"1024x768" to my Modes lines, rebooted with "/etc/init.d/gdm restart",
and booted into the full screen.

You may try framebuffer (details see FrameBuffer-HOWTO at
http://www.tldp.org), also have a look into the BIOS, especially the
Toshiba
I had the same problem on a more recent (HP) machine, until a BIOS upgrade
fixed it.
Maybe check for a new Bios?

Update: I now have a beautiful 800x600 8-bit display, thanks to
several helpful replies and some further pondering on my part.
I am using XFree86 ver 4.x (whichever version comes with woody). I
