Look at the rc.init scripts. REMOVE the one that's labeled gdm. When you
start the machine, it will go into text mode.

Remove the package gdm (apt-get remove gdm) or change the
/etc/rc?.d/S??gdm to K??gdm (or use the program update-rc.d to do this).
