I'm having quite similar symptoms on an Intel NUCi3RYH. Are you also getting iwlwifi :02:00.0: Microcode SW error detected. Restarting 0x200. in your dmesg output when this happens? And are you also getting something like [2.329024] iwlwifi :02:00.0: Unsupported splx structure

Wifi was working stable for a few days now, even when using standby and let running Laptop 8h in Idle. But today, after 1.5h beeing Idle and screen of, when coming back, Wifi was not working. Waiting 3 mins as before does not help and I needed to disable and enable Wifi adapter in GNOME-Networkman
