For others affected, installing firmware-iwlwifi from bullseye is a
possible workaround for this issue.
This can be achieved e.g. by pinning:

After an upgrade from bullseye to bookworm today, during which
firmware-iwlwifi was upgraded from 20210315-3 to 20230210-5, the wifi
interface is missing.
I believe this is the same issue that was previously reported as
#1001927.
I forgot to add: That last freeze had occurred while trying to open
icedove. I noticed some of these lines in dmesg:
