1) debian default installation is for the default user.
default user can simply want to have a localhost with php on it for
development.
So installing on /var/www is good for him.
2) webservers
For a webserver (serves only one vhost) default /var/www is most of

archive. p7zip seems much faster, needs a lot less ram and compression
is similar.
I didn't measure compression times as I find them somewhat
irelevant. A deb is compressed once but downloaded and decompressed a
million times.
