After inspecting /var/lib/dpkg/info/openerp-server.postrm I found that the user 'openerp' is not a system user on my machine, but a regular user. That is probably due to the fact that I had been trying to setup openerp manual/from tarball/source prior to using the debian package. because 'openerp'
